Abstract. The purpose of the study is to substantiate the deformations of the butter market in the current economic conditions. The article analyses the state of the federal and regional butter market, which belongs to the group of socially significant food products. In the Russian Federation, the butter market is characterized as fairly stable. The market of the Republic of Crimea is approaching the stage of stagnation under the influence of resource dependence. Customer demand is decreasing under the influence of rising prices for finished products. The current economic situation in the market is characterized by supply, demand, prices, sales volumes and other indicators. The paper presents an analysis of the dynamics of changes in production, exports, imports, consumption, internal sales and demand provision. The factors that have a negative impact on the development of production and consumption are mentioned. The opinions of experts and industry specialists are given. It was established that more than half of the cost of finished products is the cost price of raw milk. The resource dependence of Crimean butter producers is established. An increase in the volume of milk imports into the market of the republic is noted. The reasons for the reduction of raw milk production by Crimean farms were identified. The reasons for the increase in the retail price of finished products are studied. Based on statistical data, a forecast of the development of the Russian butter market is compiled. The forecast price indicator for the future period is given. The possibility of changing the predicted development under the influence of negative factors is noted. The directions of state support for industry enterprises at the federal and regional levels are listed. The study of the dynamics of changes in the indicators characterizing the Crimean market allowed us to draw a conclusion about the prospects for its development.
